Join the fun in this hands-on class as we demystify filo! Viviane will be taking class participants on a tour of the Mediterranean! We'll be creating cheese filo triangles & spanakopita. We will also prepare a healthy quinoa salad, make our own falafel, hummus, and bake Kunafa — a mouthwatering pastry filled with cream and topped with syrup. A true Mediterranean feast! Please note: masking will be optional.
About the instructor:
Viviane Levy grew up in Cairo, Egypt, attended a French Lycee, and left when she was 20. Her love for Mediterranean food never waned and she acquired her culinary skills from her mother and mother-in-law who were both excellent cooks. Her interest in nutrition, organic food, and the Mediterranean diet - rich in fresh vegetables, olive oil and nuts, led her to test her recipes on colleagues and friends. After retiring from UVM where she coordinated medical reunions and special events at the College of Medicine, Viviane did some catering from home. For the past seven years, she taught cooking classes at CVU -- Spring and Fall sessions -- through their Access Adult evening program.
